What this is about

Open HACCP is a publicly inspectable PoW24 prototype for supporting operational HACCP processes digitally. It combines device onboarding, secure measurement ingestion, role-based operation, analysis, deviations and background exports in a mobile web application.

The reference firmware uses an ESP32-S3 and SHT45, buffers readings locally and follows a bounded wake–measure–persist–transmit–sleep cycle. Sensor Protocol V1 defines encrypted transport, unique sequences, partial acknowledgements, idempotent retries and safe adoption of updated measurement and upload intervals.

The source code documents the technical state transparently. Production-ready hardware still requires real current and battery measurements, calibration, offline-capacity sizing and the relevant specialist, legal and instrument evidence.
